Alila Ubud’s Plantation restaurant was recently awarded a ‘Snail of Approval’ by Slow Food Bali for its organic and sustainable food. This award is presented to producers, purveyors and artisans who contribute to the quality, authenticity and sustainability of the food and beverages consumed in Bali with a minimum of 75% locally sourced produce.
Come 24 May 2014, Alila Ubud and Slow Food Bali will team up to present ‘Up in Smoke’, a culinary master class that will demonstrate how to prepare and smoke chicken & fish using a blend of teas and locally sourced herbs & spices.
The morning’s event will kick off in the garden at Alila Ubud with coffee, tea and delicious high tea-style pastries, followed by an introduction to the technique of smoking and the variety of ingredients that are used in the smoking process.
Participants will then be treated to a demonstration on how to cure meat and fish, how to dry the meat and fish after the curing process and how the smoking is conducted. A selection of dishes including Tea-smoked Chicken Salad, Cauliflower Cappuccino with Hot Smoked Fish, and Smoked Duck will be presented on the day.
As a fitting finale to the class, participants will enjoy a mouthwatering lunch at Plantation, relaxing together while savouring the restaurant’s award-winning food and chatting about the new cooking techniques learnt. This limited edition Master Class is available at IDR 325,000++ per person.
