Britain’s top female chef, the feisty and fiercely talented Silvena Rowe, will be breezing into Bali from 28 January - 1 February 2016 as Guest Chef in Residence at Alila Villas Soori, and then at Alila Ubud from 2 - 6 February. Don’t miss an exciting opportunity to learn from this culinary tour de force in a series of masterclasses, and savour her revelatory raw food menus.

The daughter of a Turkish-born journalist and a Bulgarian museum conservator, Silvena arrived in London from Bulgaria as a teenager, and after marriage, learned to cook at home while bringing up her two sons. Self-taught, she honed her cooking experience in the kitchen of a Notting Hill café, which led to her cooking privately for celebrities and royalty. She went on to open her own restaurant, Quince, attached to the world-famous May Fair Hotel, and has worked with some of the best chefs around the world.

With her outspoken and infectious persona and inspirational cooking style, Silvena was soon enjoying her own celebrity status, appearing as guest chef on primetime BBC TV and as a rotating judge on the top-rated US show ‘Chopped’, and writing a regular food column for The Guardian newspaper. The authority on modern Eastern Mediterranean cooking, she is also the author of eight cookbooks that celebrate her heritage and Ottoman roots.

These days, Silvena is based in Dubai where she has opened five restaurants in just fifteen months. She debuted with Omnia Gourmet, a magical cafe-deli on the water that serves mostly gluten-free, sugar-free and raw foods – the only such place in Dubai. This was followed by Omnia Blue, Omnia by Silvena, Omnia Glow and, most recently, Omnia Baharat, which opened in the Mall of the Emirates.

In Dubai, she kick-started a raw food revolution, advocating the numerous health benefits of raw foods and vegetables. She also sources locally – somewhat a challenge in the heat of the desert – using many local farms. Omnia has become a very much-loved, locally grown Emirati brand with a style of food that is clean and vibrant with delicious flavours, while Silvena is the leading chef in UAE in raw, paleo and vegan desserts.

During her Alila residencies, Silvena will share with our kitchen teams the ins and outs of raw food preparation as well as assist them to craft raw food menus using local ingredients that would extend raw food options to the resorts’ guests.

Raw food will also be a highlight of the dining experiences and masterclasses Silvena will be hosting at Alila.
