As part of its celebrity chef series to mark the hotel’s one-year anniversary, Alila Solo invites you to savour the “Taste of Sulawesi” through its cuisine in a mouthwatering Manadonese dining experience at Épice restaurant, cooked up by renowned Indonesian chef, Petty Elliot. Diners will be treated to a five-course degustation menu that reveals the riot of exciting flavours unique to Sulawesi in dishes such as Slow-cooked Beef Soto, a Manado-inspired risotto, and the sweet indulgence of Klappertaart. For the team of chefs at Épice, the hotel’s vibrant all-day dining restaurant, it will also be a wonderful opportunity to expand their repertoire in Indonesia’s rich culinary heritage.

Queen of Indonesian Cuisine

A native of Manado, North Sulawesi, Petty is a food writer, author and self-taught chef whose love of travel and passion for food can be seen in the rich diversity of ingredients and culinary traditions she brings to the table. It was during her years spent in the UK that she first began teaching classes in modern Indonesian cuisine, and took the opportunity to participate in the BBC MasterChef cooking competition.

Since returning to Jakarta in 2002, where she is now based, her reputation as an Indonesian culinary expert has flourished. She is a regular food writer for Jakarta Now magazine and The Jakarta Globe; she published her first book, ‘Papaya Flower’, in 2009 featuring the Manadonese cuisine of her homeland; and she is head contributor for the Indonesian section of the Miele Guide, one of Asia’s finest restaurant guides. In recent years she has also established her own boutique catering and private dining service.

As an avid champion of Indonesian cuisine and culture, her recipes showcase authentic Indonesian ingredients cooked with modern cooking techniques, sharing pride in the traditional foods she grew up eating while elevating them to appeal to modern palates.
