5 Grains Risotto

Food at Fort Bishangarh emphasis on the wholesome vitality & nourishment depending upon the local harvest. Ancient Grains & Seeds needs to be revived & preserved. At Alila , millets are a very integral part of our menu concept.

Ingredients

  • • 40 gr Barley
  • • 40 gr Jowar
  • • 40 gr Pearl Barley
  • • 40 gr Southern short grain Rice
  • • 30 gr Black Gram
  • • 30 gr Mustard Seeds
  • • 30 gr Fennel Seeds
  • • 30 gr Radish Leaves
  • • 30 gr Coriander Fresh
  • • 1 tsp Garlic
  • • 2 tbsp Onions
  • • 2 pcs Green Chillies
  • • 1 pc Lime
  • • 1.5 tbsp Parmesan Cheese
  • • 30 gr White Butter
  • • 2 tbsp Olive Oil
  • • 1 tsp Sunflower Seeds
  • • 1 tsp Pumpkin Seeds

Method

  • • Soak & boil the Grains
  • • In a pan, heat Olive Oil, crackle Mustard & Fennel Seeds
  • • Add slivered Garlic, sweat Onions & add Thyme Sprig.
  • • Add the Grains & coat with Fat.
  • • Add a teaspoon of Cider Vinegar, chopped Green Chilly with 4 cups stock.
  • • Let the ingredients simmer
  • • Add coarsely chopped Radish leaves & cover for 3 minutes.
  • • Fold in home churned White Butter, Parmesan & Coriander roots.
  • • Finish with Lime, sprinkle toasted seeds & serve
