Following eight years in the Australian hospitality industry, Sean has since chalked up years of extensive experience in Asia at the Hilton properties in Kuala Lumpur and Singapore, Millennium Hilton Bangkok and Grand Hilton Seoul. Armed with a degree in Hotel Operations and Hotel Management from Switzerland, he looks set to bring together a winning combination of dynamism and creativity, to deliver an exceptional destination experience for guests at Alila Villas Uluwatu. Of dual nationality – Australian and British – Sean’s well-honed leadership and people skills will certainly ensure that operations at Alila Villas Uluwatu run like a well-oiled machine.

Stefan Zijta
Executive Chef
Formerly the executive chef of Shy, the stunning Anouska Hempel designed fine-dining restaurant in Jakarta, Stefan brings to Alila Villas Uluwatu his brand of innovative French cuisine prepared with local Balinese ingredients. A believer of regional produce, this creative young Dutch chef is known for his inspiring dishes that showcase his well-honed classical techniques. Prior to his arrival in Jakarta in 2005, Stefan was sous chef at Vermeer, a two Michelin starred restaurant in Amsterdam. At Alila Villas Uluwatu, Stefan aims to impress guests with a tantalising menu that includes Bali Ocean Crab with Dried Tomatoes and Foie Gras Terrine with “Rendang”.
