Up In Smoke

AlilaUbud’s Plantation Restaurant was recently awarded a ‘Snail of Approval’’ by Slow Food Bali for its organic and sustainable food. This award is presented to producers, purveyors and artisans who contribute to the quality, authenticity and sustainability of the food and beverages consumed in Bali using a minimum of 75% locally sourced produce. The morning’s event will kick off in the garden with coffee, tea and delicious high tea-style pastries, followed by an introduction to the technique of smoking and the variety of ingredients used in the smoking process. Then watch a demonstration on how meat and fish are cured, dried, then smoked. A selection of dishes including Tea-smoked Chicken Salad, Cauliflower Cappuccino with Hot Smoked Fish, and Smoked Duck will be presented.
As a fitting finale to the class, join us for a mouthwatering ‘Up In Smoke’ themed lunch at Plantation, relaxing together while savouring the restaurant’s award-winning food and chatting about the new cooking techniques learnt.

To match the classic format of this movie, our mixology team have studied old recipes and have re-created a cocktail menu for this evening that blends perfectly with tonight’s main feature.

Local dancers and musicians from Bayad Village present a journey of the Tiger, Boar and Monkey through a Barong Dance, a traditional and popular part of Balinese culture.
