Breezing into West Bali on 19 June will be Irish chef Andy McFadden of L’Autre Pied in Marylebone, London. Working his way through some of the best restaurants in Ireland on the continent, Andy was just 25 when he took over as head chef at L’Autre Pied, and for several years was the youngest Michelin-Star Chef in all of London. Andy is particularly passionate about the slow food movement, which champions food heritage and good food husbandry to produce delicious, authentic, regional specialties.

Seasonality is key to Chef William Drabble who will be at Alila Villas Soori on 10 July. Head chef of Seven Park Place in St. James’s Hotel and Club, Piccadily, London, William has spent much of his career working in some of England’s most influential restaurants. Earning many Michelin stars along the way. With a strong understanding of seasonality, his cooking is about constantly creating fresh seasonal dishes, pairing local English ingredients with modern French technique. The result is gusty, hearty flavours.

Join our culinary team for a seafood night market themed dinner, featuring locally sourced, sustainable seafood and crustaceans. In the morning, our resident chef will venture out to the local market, handpick the best catch of the day and transform it into a refined dinner to be enjoyed on our volcanic-sand beach in the west of Bali.
