Fernando arrives on the tranquil shores of West Bali from the bustling city of Budapest, Hungary, where he was most recently Executive Chef of the luxurious L’Occhio Di Stile restaurant, crafting premium quality ingredients into seasonal menus showcasing modern European cuisine.
Fernando’s rise through the culinary ranks began in his home country of Argentina, where he gained experience at notable establishments such as the Philippe Starck-designed El Bistro restaurant at Faena Hotel & Universe, and the 647 Dinner Club, which won Best Restaurant award by Conde Nast Traveler in 2006. In 2008, Fernando travelled to France and Switzerland, where he enriched his repertoire of European cooking techniques at renowned Michelin-starred restaurants such as L’Atelier Paris Saint Germain by Joel Robuchon, and Mirazur, ranked number 11 in the San Pellegrino Best 50 Restaurants. Two years later, he was making a name for himself at the new Atmosphere restaurant at the top of Burj Khalifa in Dubai before landing in Budapest.
Chef Fernando now looks forward to embracing life in the tropics and imprinting Alila Villas Soori’s two signature restaurants, Cotta and Ombak, with his passion for creating an exquisite gastronomic experience.
Our semi-covered open-air Bali beach restaurant featuring 'tasting-style' daily rotating breakfast menus, highlighting local fare and fun twists on classic breakfast favourites. Breakfast at Cotta also allows you to try our wide selection of specialty coffees and teas, including the world-renowned Kopi Luwak.
Lunch and dinner feature signature authentic Indonesian cuisine from across the archipelago with a strong Balinese focus.

Ombak is our signature dining experience; The Executive chef and the team have created a menu which will give you a taste of home as well as offering delightful surprises along the way. Ombak also offers a signature tasting menu which changes seasonally with the option of wine and cocktail pairings to enhance the experience. Alternatively tell us your preference and let us take you on a inspirational and surprising food and wine experience.
For sunset Ombak has created a sumptous snack menu to enjoy with one of our creative cocktails using the islands abundance of fresh fruit with the addition of premium spirits as well as classics to enjoy.
The sunset lounge is the perfect place for a pre-dinner drink and to watch the ever changing sunsets of the beautiful west coast. Ombak also hosts hands-on cooking classes during the day as well as cocktail master class, feel free to ask your personal host to reserve dinner for you on the wooden deck, under the stars, and let us spoil you whilst listening to the waves crashing against the volcanic-sand coast of Kelating.

The Reading Room
The Reading Room provides a comforting interlude from the sun, as a base to put together and start off your day’s island itinerary, or simply for a friendly rendezvous over a selection of fresh beverages. You can sit back and surf the web through a set of iPads, or explore some good reads with a selection of international newspapers as well as an assortment of the islands travel and fashion magazines.
The Reading Room offers Western light and comfort food for lunch. Past noon, you can enjoy our wonderful TWG tea selections, iced teas and speciality coffees as well as sample our delicious sandwiches, snacks or pastries. Our knowledgeable staff are ready to provide you with valuable insights into the different origins, flavours and backgrounds of the TWG range. The reading room is also the exhibition space for our Artist in Residence, where you can admire the masterpieces of intriguing local and international artists that fly in regularly to share and showcase their art.
