Chef Santika, Coming Home to Alila Manggis in East Bali

The Seasalt Restaurant and the ever popular cooking school at Alila Manggis work hard to incorporate locally sourced ingredients and produce in the dishes that they lovingly prepare for their guests. The restaurant itself derives its name from the sea salt pans nearby which provides for the resort. This month, Alila Manggis celebrates the homecoming of Chef Nyoman Santika, who now helms the talented kitchen team as the Executive Chef. Originally from East Bali, he was part of the hotel’s opening crew in varied capacities before venturing out – first to the Amandari in Ubud and then onto international waters in Turks & Cacos Island and Amanyara before returning to Alila Ubud, Bali. Making his debut will be a new dinner menu featuring local creations on a daily basis. Guests will be delighted with the traditional breakfast, peppered with the typical Balinese morning fares for guests to savour. Look out for his delectable tea time specials served at the pool side. Back in 1998, Chef Santika was part of the team that initiated the Organic Garden. Guests can look forward to more interactive sessions along with the latest Organic Garden cooking semester. Homemade jams, ice creams, flavoured salts, organic Granola as well as the ever popular Royal Megibung will continue to entice. Chef Santika’ gregarious nature makes him highly accessible to guests and a favourite invitee to the annual Balinese food festivals down in Australia.
